The London EDITION has appointed Ignacio Grimaldi as Head of Bars, with responsibility for the beverage programme across the hotel.
His remit encompasses the Punch Room and Lobby Bar, alongside Berners Tavern, private events and in-room dining.
Born in Cádiz on Spain’s Atlantic coast, Grimaldi has previously worked at Kimpton Fitzroy and The Dorchester before joining St Pancras London.
At St Pancras, he led the beverage offering across the hotel’s outlets and developed the Sips of Time cocktail menu, drawing inspiration from the history and development of cocktails.
He was also behind the 505 Punch Ritual at the hotel’s Booking Office bar, a daily service taking place at five minutes past five.
Grimaldi will now apply his approach to drinks and service across The London EDITION’s different food and beverage settings.
Ignacio Grimaldi said: “Hospitality lives in the detail and the sense of occasion, and that is what I want every guest at The London EDITION to feel, whether in the hush of the Punch Room or over a glass at Berners Tavern.”
