Matteo Carretta has been appointed as the new Director of Bars at the forthcoming 1 Hotel Mayfair, London’s first mission-driven sustainable luxury hotel, providing guest experience that positively impacts the planet.
Carretta will oversee the property’s cocktail bar, Dover Yard, and the drinks programme at the hotel’s flagship restaurant, Dovetale, led by Tom Sellers.
Most recently, Carretta held the position of Head of Mixology at Claridge’s where he oversaw operations and development for all of the hotel’s bar outlets. He brings a wealth of experience to the F&B team at 1 Hotel Mayfair, having worked in some of Europe’s most prestigious establishments.

Dover Yard will be a neighbourhood bar with Mayfair sensibilities, offering guests the chance to experience a personalised service and a new style of luxury. The bar will be situated on the newly walkable cut-through between Berkeley Street and Dover Street. The drinks programme will focus on going ‘back to basics’, taking inspiration from the beauty and simplicity of nature with a sustainable and conscious approach.
The cocktail menu is made up of four categories: ‘Repurposed Ingredients’, which reflect the 1 Hotels’ ethos by using preserves made of excess produce from the juice bar and liqueurs from daily coffee grinds; ‘Native Flavours’ created with British produced spirits and craft, local brands; ‘Seasonal Classics’ using the best quality, locally sourced produce; and thoughtfully considered ‘Low and No-alcohol’ options. A comforting bar food menu, designed by Tom Sellers, will also be on offer throughout the day and later into the night, where DJs will keep the energy rising.
Carretta will also oversee the drinks offering at Dovetale where the cocktail architecture will be closely linked to the offering in the kitchen.
Dover Yard will welcome hotel guests, the local Mayfair scene and London’s hospitality and creative industries alike, offering guests a welcome refuge from city life, with modern hospitality at its heart.
