The Savoy to Launch Beaufort Wine Bar This October

The Savoy will launch Beaufort Wine Bar this October, creating a dedicated wine destination within the London hotel.

The new concept will offer more than 250 wines sourced from 18 countries across six continents, supported by what The Savoy describes as one of the UK’s largest wine-by-the-glass programmes.

Around half of the cellar will be available by the glass using Coravin technology, giving guests access to rare, mature and contemporary wines without ordering a full bottle.

The collection spans 50 years, with vintages ranging from 1975 to 2025.

Its selection will include First Growth Bordeaux, Grand Cru Burgundy and mature Champagne alongside wines from less familiar regions and producers.

The wine-focused approach will extend to the spirits list, which will exclusively feature grape-based spirits.

A selection of wine-led cocktails will also be available using spirits including Cognac, Grappa and Pisco.

Head Sommelier Romain Audrerie will lead the new direction at Beaufort Wine Bar.

Audrerie brings more than 15 years of international hospitality experience and was previously part of the opening team at Chiltern Firehouse before becoming Global Wine Director for André Balazs Properties.

His approach at Beaufort will focus on making the collection accessible to guests regardless of their existing knowledge of wine.

The food menu has been developed to complement the drinks offer and will centre on produce-led dishes designed for sharing.

A tableside carving experience will include artisan cured meats and hand-carved Jamón Ibérico served from a custom-made flywheel slicer trolley.

A selection of British cheeses will also be available.

Other dishes will include Hampshire trout with Dorset wasabi and Buddha’s Hand, black truffle cheese fondue and a dedicated caviar selection.

Live music will form part of the evening experience, with the bar designed to cater for everything from individual glasses of wine to longer food and drink occasions.

Beaufort Wine Bar is scheduled to open at The Savoy in October 2026.
