NoriFish and Okiboru to Open at Atlanta’s Ponce City Market

Japanese dining concepts NoriFish and Okiboru will open at Ponce City Market in Atlanta on Friday 28 August.

The two restaurants, created by Atlanta operators Sean Park and Justin Lim, will join the Central Food Hall, bringing sushi, ramen and tsukemen to the mixed-use destination.

NoriFish was founded by Park in 2022 and currently operates locations in Buckhead and Sandy Springs.

Park is a formally trained sushi chef with 15 years’ experience in traditional sushi making and Japanese cuisine.

The Ponce City Market restaurant will feature a menu developed specifically for the location, including made-to-order hand rolls, signature sushi rolls and Japanese small plates.

Seafood will be sourced from Tokyo’s Toyosu Fish Market, with dishes changing according to season and availability.

The drinks programme has been developed with Atlanta mixologist and certified sake advisor Hendry Kurniawan and will include craft cocktails, house and premium sake, local and Japanese lagers and wines.

Okiboru, which was co-founded by Park and Lim and first opened in Los Angeles in 2018, specialises in traditional ramen and tsukemen, or dipping noodles.

The concept has been recognised with a MICHELIN Bib Gourmand and currently operates locations in Sandy Springs, Buckhead, Duluth and Buford in Georgia, alongside three restaurants in New York.

Its Ponce City Market menu will focus on tsukemen and ramen prepared with collagen-rich broths and house-made noodles, alongside appetisers and rice dishes.

The drinks offer will include cocktails, sake, lagers, craft beers and non-alcoholic options including teas and soft drinks.

Park said: “I’ve always believed you can respect Japanese tradition while still finding ways to make it your own. That’s really what these two concepts represent.

“NoriFish is our expression of sushi, and Okiboru is our take on ramen and tsukemen. We’ve spent years refining both, and we’re excited to finally share them together at Ponce City Market.”

The openings will expand the range of international cuisines represented at Ponce City Market’s Central Food Hall, which now comprises more than 25 concepts.

Adam Schwegman, Head of Retail Leasing at Jamestown, said: “Ponce City Market provides the potential for multiple culinary journeys with each visit.

“With the openings of NoriFish and Okiboru, the Central Food Hall is now home to over 25 concepts representing cuisine from around the world, including Japanese, Puerto Rican, Mexican, Vietnamese, Italian, Thai, American, Persian, Chinese, and Korean.”

Other food and beverage concepts to have joined Ponce City Market during 2026 include Thai street food restaurant Terminal 26, cocktail lounge and listening room La Cueva, and Three Taverns Brewery’s Ponce Brew Terminal.
