A new all-day rooftop restaurant and bar, Honeyshade, is to open above Central Park Hotel in Bayswater in mid-September.

Located at 49–67 Queensborough Terrace, the restaurant will combine British brasserie cooking with Levantine influences and operate across breakfast, lunch, dinner and evening drinks.
Honeyshade will occupy a rooftop position close to Hyde Park, with the space designed around a garden pavilion concept combining natural light, planting and an outdoor terrace.
The restaurant has been developed by founder Paul Sarlas, an experienced international hospitality operator whose career has included restaurant, hotel and food and beverage leadership roles across several markets.
Its menu will centre on British brasserie dishes using seasonal produce alongside Levantine flavours and cooking techniques.
A stone oven will be used for manakeesh and house-made flatbreads, while a live grill will produce steaks, seafood and slow-cooked dishes over an open flame.
The offer has been structured around different parts of the day.
Breakfast will include speciality coffee and a dedicated morning menu before lunch moves towards handmade pasta, salads and charcoal-grilled dishes.
In the evening, the restaurant will transition towards sharing plates, wine and a signature cocktail list.
The multi-daypart approach reflects Honeyshade’s ambition to serve both hotel guests and the surrounding Bayswater community rather than operating primarily as a destination for a single service period.
Alongside the main restaurant and rooftop terrace, the venue will include a private dining room targeting corporate dinners, celebrations and other events.
The interiors will draw on Georgian and Victorian architectural influences alongside references to the neighbouring landscape of Hyde Park.
Sarlas said: “With Honeyshade, I wanted to create the kind of restaurant I have always believed in: somewhere with its own identity, great food and genuine hospitality, but without unnecessary formality.
“A place that feels just as natural for breakfast or a relaxed lunch as it does for cocktails, dinner or an evening with friends.
“The food has the familiarity and generosity of a British brasserie, with Levantine influences bringing vibrancy, flavour and character.
“Most importantly, I want Honeyshade to become part of the neighbourhood, somewhere people genuinely enjoy spending time and want to return to.”
The opening comes during continued investment across Bayswater and Queensway.
One of the largest developments has been The Whiteley, the £1.5bn redevelopment of the former Whiteleys department store into a mixed-use destination incorporating residences, restaurants, retail, leisure facilities and the UK’s first Six Senses hotel.
Central Park Hotel itself is also undergoing a substantial redevelopment, with refurbished guestrooms already being introduced while work continues across the property.
Honeyshade will open above Central Park Hotel in mid-September 2026, with recruitment for the new restaurant already under way.
