Your definition of hospitality?
Providing a great service that creates memories for our customers. That can be through being welcomed by a smile, fantastic food and attention to detail.
What does sustainability mean to you?
Preserving a world that can be passed down to our grandchildren and generations to come, be that by the way in which we farm, produce or source food. We all have to do our bit and it starts with one small change which we all have a responsibility to do.
Team or staff, and why?
Team – It always starts with teams. They’re our foundation and help drive the vision. They’re our greatest asset and we must make sure we look after them.
Where do you see hospitality’s priorities?
Creating an environment that brings people back together (especially after the last 2 years) with a real focus on sustainability, nutrition, health & wellbeing and atmosphere. People want to reconnect and socialise and hospitality has an important role to play in this.
Is hospitality local or global?
I think it can be both. We’ll never get away from sourcing products such as bananas and avocados globally. Local to me means ‘really local’, not the greengrocer delivering products sourced from around the world but products that are grown or produced nearby and making a real point of difference.
What’s best about your weekend?
Getting a chance to be with my family. The weekends usually consist of netball matches and swimming galas but it’s great to put the emails to one side and recharge the batteries. It’s even better if we eat out so I don’t need to think about cooking!
I relax by…
A great glass of champagne on the beach in the sun or failing that an amazing spa or meal out.
Eat out or eat in?
Eating out, not only do I not have to do the washing up, I get to be in our amazing industry and experience new flavours and concepts. It’s blown me away the amount of fabulous start-ups that have come out of COVID.

I can’t use chopsticks! It’s always one of those things that I keep meaning to learn but have never got around to it. I get myself in a muddle and end up asking for a fork. Maybe this is the year I start to learn.
