Your definition of hospitality?

The art of anticipation. Continually evolving to determine how and what to serve to consistently provide surprise and delight.

What does sustainability mean to you?

The planet is being destroyed by all of us. We must balance the livelihood from our customers travel that provides our income with the CO2 emissions that this creates. So, plant more trees, stop producing non degradable products like plastic, replace fuel from coal and gas and recycle like our grandparents used to. Oh, and create a society driven by sharing resources.

Team or staff, and why?

Team is best, especially when working in harmony. Staff sounds like an episode from Upstairs Downstairs. I once worked with a GM who was so blue blooded that he tipped his own ‘staff’.

Where do you see hospitality’s priorities?

Cash, cash, cash; then in a year’s time under a new prime minister, ideally one who knows what they are doing, we can get back into a more stable trading environment. The next 12 months will be petrifying.

Is hospitality local or global?

Get the local right and the global takes care of itself.

What’s best about your weekend?

Some unstructured time and a good book, a brisk walk and then Frasier on repeat.

I relax by…

Writing, dreaming up soft drink recipes, coming up with new hotel concepts and spending time with the grandchildren.

Eat out or eat in?

Eat out to meet new friends, entertain (when covid) allows at home.

Tea or coffee?

Cappuccino in the morning, Rooibos tea in the afternoon.

Tell us something about yourself that would surprise our readers…

I am building a big model railway in the lofty part of my loft. I’m 4 years in and finally all the electrics work. Scenery next. It has a fish quay and beach, a Victorian seaside town and a cricket pitch in a Cotswold setting.
