Pavyllon London and BEHIND Join Forces for Michelin-Starred Counter Culture Dinner

Pavyllon London and Michelin-starred restaurant BEHIND are joining forces for a one-night dining collaboration on Tuesday 22 September.

The event forms the latest instalment of Pavyllon London’s Counter Culture series and will see Executive Chef Benjamin Ferra y Castell welcome BEHIND chef-owner Andy Beynon to the restaurant.

Both restaurants place counter dining at the centre of their guest experience.

BEHIND operates around an intimate 18-seat chef’s counter, while Pavyllon London features a sweeping 30-cover counter surrounding its open kitchen.

Both restaurants also achieved Michelin recognition shortly after opening, with BEHIND receiving its star 20 days after launch and Pavyllon London earning its star within six months.

For the collaboration, Ferra y Castell and Beynon have developed four and six-course menus bringing together Pavyllon London’s modern French cooking and BEHIND’s seafood-led approach.

The evening will begin with snacks created by both chefs before Beynon serves sea bream with kaffir lime and jalapeño.

Another BEHIND dish will feature smoked kipper with scallops, pike roe and scallop black pudding.

Ferra y Castell will take responsibility for the main course, serving poached beef fillet with kirsch-infused milk, sherry vinegar jus and Parmesan gratiné.

The menu will conclude with dark chocolate namelaka accompanied by caramel, sobacha croustillant and whisky ice cream.

Guests opting for the extended menu will also receive Ferra y Castell’s orzo with French onion consommé and 12-month Comté, alongside Beynon’s raspberry, herb and ginger pre-dessert.

Ferra y Castell developed his approach to modern French cooking while working alongside Yannick Alléno, while Beynon has built BEHIND around seafood-focused cooking and close interaction between chefs and diners.

Guests will be seated either around Pavyllon London’s counter or within the main dining room.

Throughout the evening, the two chefs will also meet diners and discuss the inspiration and techniques behind their dishes.

The Pavyllon London x BEHIND Counter Culture collaboration will take place on Tuesday 22 September.
