Dorchester Collection has appointed Tristan Delaittre as General Manager of Hotel Eden in Rome, effective from 1 October 2026.

Delaittre moves into the position after more than seven years with Dorchester Collection and brings experience spanning luxury hotel operations, food and beverage and gastronomy.
Most recently, he served as the group’s Corporate Director of Food and Beverage, overseeing F&B strategy across Dorchester Collection’s ten hotels.
His responsibilities included developing the group’s dining destinations and working on new concepts for forthcoming hotel openings including The Alba in Dubai, scheduled for 2028, and Tokyo in 2029.
Prior to taking on the corporate role, Delaittre was Food and Beverage Director at Le Meurice in Paris.
There, he oversaw the hotel’s restaurants, bars, events and in-room dining operations, including the two-Michelin-starred Restaurant le Meurice Alain Ducasse and Cédric Grolet’s pastry boutique.
His wider career has included senior roles across luxury hotel, revenue and culinary operations throughout Europe.

Located above Rome’s Spanish Steps, Hotel Eden comprises 98 rooms and suites, many overlooking the city or Villa Borghese.
Its food and beverage offer includes rooftop restaurants La Terrazza and Il Giardino.
The property also features The Eden Spa, which includes private treatment suites, a relaxation lounge and fitness studio.
