Chef-owner Dan McGeorge has introduced a new dining format at Liverpool restaurant Vetch, replacing its tasting menu with a more relaxed, sharing-led offer.

The Hope Street restaurant has moved away from set courses in favour of a menu combining snacks, small plates, larger sharing dishes and sides, with guests able to order without a prescribed sequence.
Locally sourced ingredients remain central to the kitchen, while the new menu broadens Vetch’s approach through influences from Japan, the Mediterranean and other international cuisines.
McGeorge said: “Tasting menus ask you to sit still and follow instructions. We wanted the opposite, a room where the food hits the table fast, the wine keeps coming, and nobody’s checking the clock.
“This is international cooking Liverpool style but with the volume cranked up.”
Among the dishes on the new menu are oysters with green strawberry and yuzu hot sauce and raw trout tostada with finger lime and togarashi.
A buffalo wing with ranch and caviar also features, alongside salt-aged duck with blackberry kosho.
Larger dishes include a 600g T-bone designed for sharing, served with a choice of chimichurri or sauce au poivre.
Desserts include sticky toffee pudding with miso caramel sauce, accompanied by a selection of after-dinner drinks ranging from Macallan 12-year-old whisky to Douro Valley ruby port.
Changes have also been made to the restaurant’s wider service and drinks offer.
Vetch has introduced a new soundtrack, revised drinks list and more informal style of service, with pacing intended to follow the flow of the dining room rather than a fixed sequence.
McGeorge added: “We’re not trying to be the neighbourhood restaurant that behaves like it’s somewhere else.
“This is local hedonism, proper flavour, proper ingredients, and none of the stiffness you find in fine dining spots.”
McGeorge won Great British Menu in 2021 before opening Vetch in spring 2024.
The restaurant subsequently received two AA Rosettes, was rated Very Good by the Good Food Guide and has been listed in the Michelin Guide for 2025 and 2026.
Vetch was also ranked number 36 in SquareMeal’s Top 100 UK Restaurants.
The new menu and dining format are now live at Vetch on Hope Street, Liverpool.
