Cornish Bakery has reported sales 50% above expectations at its new Witney bakery following one of the strongest openings in the company’s history.

The independent bakery opened its Market Square site on 21 August, with demand during the first few days resulting in Cornish pasties being transferred from other locations to maintain supplies.
Cornish Bakery said the Oxfordshire opening has also recorded a Net Promoter Score of 90% since launch, based on customer feedback through Google reviews.
The bakery occupies a Grade II listed building previously used by Shoe Zone and has created more than 16 year-round jobs.
The property was refurbished specifically for the opening, with Cornish Bakery adapting the design to reflect the building and its Market Square setting rather than applying a standard format.
Mat Finch, Managing Director of Cornish Bakery, said: “We knew Witney was a special town and were incredibly excited about opening here, but the response has exceeded even our already ambitious expectations. Nicola and the team there have worked incredibly hard and I’m so proud of them all.”
Finch added: “The warmth of the welcome from the local community and neighbouring businesses has been extraordinary. We set out to create a bakery that felt like it belonged in Witney rather than simply dropping a ‘cookie-cutter’ formula into the town, and it has been wonderful to see people embrace this bespoke Cornish Bakery so enthusiastically.
“Additionally, the council’s policy of free parking in Witney town centre really does help promote a thriving high street.”
Originally founded in Mevagissey, Cornwall, Cornish Bakery has continued to expand its estate while increasingly adapting individual locations to their buildings and surrounding communities.
The Witney bakery serves Cornish Bakery’s pasties and sausage rolls alongside viennoiserie, pastries and cakes.
Its drinks offer includes speciality coffee supplied by Cornish business Origin Coffee.
The Market Square site trades seven days a week from 8am until 6pm.
