Vietnamese restaurant group Pho is to open its second Bristol location at Cribbs after signing a 15-year lease on a 3,681 sq ft unit.
The restaurant will replace Carluccio’s when it opens later this year and represents the latest addition to Cribbs’ expanding food and beverage offer.
Pho will join recent arrivals including Picaro Lounge, Joe & The Juice, PizzaExpress, Honest Burgers and Wingstop, alongside existing operators including Wagamama, Nando’s and itsu.
The opening will become Pho’s second restaurant in Bristol as the group continues to expand its UK estate.
Cribbs is also refreshing its dining offer as its audience changes, with the destination reporting a 13% increase in Gen Z visitors during 2025.
Pho’s menu is centred on Vietnamese street food, including its signature pho noodle soups alongside curries, rice bowls and salads.
The operator will also benefit from continued residential and leisure development around Cribbs Causeway.
The nearby Brabazon development is set to deliver 6,500 homes and 2,000 student rooms, while a 19,500-capacity arena planned for the site is scheduled to open in 2028.
