Reena’s recipe: Carrot Rice

Carrot Rice Recipe
Ingredients:
- 1 large carrot grated
- 4 small handfuls of rice
- Half tsp ginger/garlic paste
- Half tsp cumin seeds
- Half tsp mustard seeds
- Half tsp turmeric
- Half tsp salt
- 1 tsp coriander/cumin powder
Method:
Boil rice as per your cooking method (I rinse in cold water, boil in lots of water then rinse in cold water once cooked).
Add a tbs of oil to a pan and add cumin and mustard seeds and let pop.
Add the ginger/garlic paste and carrots then add spices.
May need a tiny splash of water if it sticks.
Cook for 2/3 mins as you want the carrots to be tender but not mushy.
Add your cooked rice and mix well. Heat until the rice is hot.
