Pantheon has launched two new sous vide water baths and three chamber vacuum packing machines in response to the increasing demand for this type of cooking.
Both the 8 litre SV1 water bath and the larger, SV2, 20 litre bath are very accurate, ultra-reliable and easy to use. They have a LCD display that shows water temperature and remaining cooking time and also alert the operator to low water levels. As with all Pantheon’s equipment, ease of use is a priority and the water baths are exceptionally easy to programme with the touch pad control.
Foods to be cooked sous vide need to be sealed and the most effective method is a chamber-style vacuum packing machine that creates a vacuum in the machine’s cavity rather than simply in the pouch itself. This means it can be used for a wider variety of foods and liquids too. Sous vide cooking
Food cooks very slowly over a long timeframe achieving a level of flavour and tenderness impossible to obtain with conventional cooking methods. Food will be evenly cooked throughout and retain its moisture meaning that there is no obvious shrinkage. Chefs are free to pursue other tasks without any danger of food being over-cooked.
To achieve a browned finish, a minute or two on a griddle or a brief blast with a blowtorch is all that is required.
Although sous vide cooking is most commonly associated with meat and fish, spectacular results can be achieved with vegetables and sauces and it can also be used for infusions.
