Acclaimed two Michelin-starred restaurant, The Greenhouse, is thrilled to welcome Alex Dilling as new Executive Chef to its world-renowned kitchen in Mayfair.
Identified as one of the world’s greatest culinary talents by MARC Chairman and leading restaurateur, Marlon Ablea, Alex Dilling will succeed Arnaud Bignon and begin his exciting new role on the 16th of August. The newly appointed Executive Chef will reinterpret the two Michelin-starred restaurant’s menus with his own culinary signature, placing an emphasis on elegant and refined modern-classic cuisine. His technical skill will complement the elite Mayfair restaurant’s extensive wine list of over 3,400 labels.
This exciting new step in Alex Dilling’s long-standing career comes after over a decade of honing his expertise with some of the most esteemed talents in the industry.
He joins The Greenhouse from Hélène Darroze at The Connaught, where he most recently led the team as Executive Corporate Chef, maintaining the London restaurant’s two Michelin stars as well as overseeing the Paris site. Prior to this, he furthered his knowledge as a Chef De Cuisine at Caviar Russe in New York, which earned a Michelin star under his direction.
Earlier on in his career, Alex Dilling built his experience working for Alain Ducasse, and under the direction of Didier Elena and Tony Esnault at Adour in New York.

Alex Dilling will introduce a fresh menu concept to The Greenhouse with his repertoire of technical and aesthetically pleasing dishes set to utilise the very best of British and fresh produce.
