PULSE, a new restaurant dedicated to showcasing the versatility of beans and pulses, is preparing to open on Hoxton Street in Shoreditch this November, introducing a distinctive dining concept to London’s restaurant scene.

The new venue will place legumes at the centre of its menu, combining traditional ingredients with contemporary cooking techniques and creative flavour combinations.
PULSE aims to demonstrate how beans and pulses can form the foundation of a varied restaurant offering, moving beyond familiar preparations to create dishes designed to appeal to a broad range of diners.
The restaurant has been developed with a team of culinary professionals, including a former MasterChef contestant, experienced chefs and international bean specialists, bringing together expertise in cooking with legumes.
The opening menu will feature a selection of dishes incorporating different varieties of beans and pulses, with influences drawn from several international cuisines.
Among the dishes will be a Spiced Chilli Black Bean Tostada with charred corn, fresh avocado and pickled onion, alongside Herby Sausage and Tomato Cannellini Beans served on toasted sourdough.
Other options include Curried Chickpea and Roasted Cauliflower with coconut, raisins and crispy onion, and Marry Me Cannellini Agnolotti with Parmesan cream and crispy sage.
Beans will also feature in the dessert offering, with the restaurant introducing a Dark Chocolate and White Bean Fondant served with salted caramel.
The menu has been designed to demonstrate the range of textures and flavours that can be achieved using legumes, incorporating them into dishes traditionally associated with other ingredients.
Located within a former butcher’s shop on Hoxton Street, PULSE will retain elements of the building’s industrial character while introducing a contemporary restaurant interior.
Original tiled walls will be incorporated into the design, alongside booth seating and a central bar.
Large street-facing windows will connect the dining room with the surrounding Hoxton neighbourhood, while a bespoke chandelier featuring glass, resin and silicone beans will provide a distinctive centrepiece.
The restaurant’s interior has been developed to reflect its culinary approach, combining simple materials with contemporary design features to create a welcoming dining environment.
To mark its opening, PULSE will host two soft-launch evenings on Wednesday 18 and Thursday 19 November, offering a total of 200 complimentary dinners.
The sessions will take place at 6.30pm and 8.30pm on both evenings, providing early guests with an opportunity to experience the restaurant’s menu.
Details of how to secure places will be announced through the restaurant’s social media channels.
PULSE is also planning a lunchtime takeaway hatch as part of its launch, with an offering of up to 400 lunches daily from midday, subject to availability.
The takeaway concept will provide an additional way for customers to experience the restaurant’s bean-focused dishes, extending its offering beyond seated dining.
The November opening will introduce a new specialist dining concept to Shoreditch, placing familiar ingredients at the centre of a menu designed to demonstrate their versatility across savoury dishes, desserts and takeaway food.
