TOZI Restaurant and Bar has appointed Francesco Vacca as Head Chef, following more than nine years with the restaurant. Francesco will continue to work closely with and report to TOZI’s long-standing Executive Chef, Maurilio Molteni, who remains at the helm of the restaurant’s culinary direction after more than a decade.
Having joined TOZI in 2017, Francesco has risen through the ranks of the kitchen, playing an integral role in the restaurant’s success and the development of its menus. In his new role as Head Chef, he will oversee the day-to-day running of the kitchen while working alongside Maurilio to continue TOZI’s celebration of authentic Italian cooking, seasonal produce and the Venetian sharing plates for which the restaurant has become known.
With almost two decades of hospitality experience, Francesco began his culinary career in Sardinia before moving to London, gaining invaluable training at Italian establishments including the likes of Harry’s Bar and Enoteca Turi. His expertise in fresh pasta, high-volume kitchen operations and menu development is underpinned by a passion for seasonality and classic Italian flavours.

Francesco will continue to work closely with Chef Maurilio, Senior Restaurant & Bar Manager Stefano Meloni and Restaurant Manager Carlo Consoli as part of TOZI’s long-standing senior team. Together, they bring a consistency of leadership and a longstanding commitment to the restaurant’s original ethos: bringing the conviviality and spirit of the osterias of Venice to the heart of Victoria.
