JA Mar Hall Signals Bold New Era for Food and Beverage with Senior Appointments

JA Mar Hall Golf and Spa Resort has made a series of senior appointments as it accelerates the next phase of its multi-million-pound transformation.

The new leadership team has been appointed to redefine the five-star resort’s food, beverage and guest experience.

Brian Scanlan joins as Executive Chef, alongside Yasmine Gibb as Food & Beverage Services Manager and Conrad Cooper as Executive Housekeeper.

Together, they bring experience from across some of the hospitality industry’s most prestigious names.

Scanlan, one of Scotland’s respected culinary talents, brings more than 25 years of industry experience to his new role.

His career has included senior positions across restaurant groups and luxury hotels, including The Ivy and, most recently, Cameron House on Loch Lomond.

At Mar Hall, he will shape a new culinary identity rooted in provenance, sustainability and craft.

There will be a renewed focus on local producers and ingredients grown in the estate’s own herb garden.

Scanlan said: “JA Mar Hall’s setting and ambition make this a rare opportunity.

“My vision is to build a food and beverage experience with a real identity of its own – one that puts Scottish provenance and craft at its heart.”

Gibb brings five-star service experience developed over seven years at Hilton Glasgow, where she progressed to the role of Food & Beverage Training Manager.

As Food & Beverage Services Manager, she will focus on consistency and polish across the estate, from dining and events to weddings.

Known for her attention to detail and ability to develop high-performing teams, Gibb will support the resort’s ambition to make food and beverage one of Mar Hall’s defining strengths.

Gibb said: “Food and beverage is central to how guests experience Mar Hall.

“My focus is on making it one of the estate’s defining strengths – every setting with a clear purpose, distinct character and world-class service.”

Cooper joins Mar Hall as Executive Housekeeper, bringing experience in luxury hospitality, most recently at Crowne Plaza Glasgow.

He will uphold the standards and attention to detail that shape the guest experience across the resort.

Known for his precision and focus on guest care, Cooper brings the discipline and warmth associated with a five-star stay.

Cooper said: “At a five-star estate like Mar Hall, every detail matters.

“I’m looking forward to upholding the standards, care and pride that define the resort.”

The appointments come as JA Mar Hall continues to elevate its food and beverage offer across the resort.

This includes a refreshed afternoon tea concept and evolved menus in The Gallery, The Dining Room and the resort’s private event spaces.
