Loaded Fries Ingredients:
- 2000g Fries
- 50g Santa Maria Steakhouse BBQ Spice
- 200g Santa Maria Green Jalapenos
- 400g Santa Maria Guacamole Style Topping
- 400g Santa Maria Cheddar Cheese Sauce
Chicken Tinga Topping Ingredients:
- 600g Chicken Thighs, skinless & boneless
- 30g Santa Maria Mex Fajita Spice Mix
- 40g Santa Maria Chipotle Paste
- 250g Pepper, sliced
- 150g Onion
- 120g Santa Maria Salsa
Garnish Ingredients:
- 50g Spring Onion, chopped
- Coriander
How to prepare:
- For premium loaded fries prepare the chicken in advance
- Simply mix all the ingredients together in an oven proof dish, cover and cook for 2 hours until soft and pullable
- Cook the fires in a fryer as per usual. Remove and place into a bowl.
- Sprinkle the fries with seasoning and shake well
- Top the fries with jalapenos, guacamole, salsa and the chicken
- Drizzle with cheese sauce and garnish
