This May, Radio Alice, the pizzeria hailing from Italy, and founded by brothers Matteo and Salvatore Aloe, will welcome five of the nation’s most innovative chefs to their Hoxton and Clapham kitchens. Each chef will create a different pizza that will run as a special on the restaurant’s menu for one week only.
Kicking things off on 14th May will be Meriel Armitage, founder of vegan specialists, Club Mexicana, showcasing her Jackfruit Carnitas pizza comprising of Braised jackfruit, pink onions, salsa verde and fresh coriander. Jeremy Chan of Ikoyi steps up to the plate in week two with his South African inspired Roasted kelp marinated razor clams, dandelions, Yaji spice and caramelised pork heart. Pizzas in the third week are courtesy of Sandia Chang of bubbledogs with her Grilled Chicken, buffalo marinara, blue cheese and pickled celery pizza, followed by Ollie Templeton of Carousel who will bring Grilled leek cream, pickled anchovies and spring herbs to the table. Finally, travelling up to the capital from Brighton, Douglas McMaster of Silo will be serving his take on a Calzone with British Spiced Cauliflower, continuing to highlight the importance of zero waste for which he is known.
Championing the belief that pizza starts with a light and digestible sourdough base, the brothers’ integrity in ingredients extends from the dough, which is made every day using organic stoneground flour and wild yeast, before being fermented for 24hrs, through to carefully sourced and seasonal toppings, all served sliced to share. Each chef will be tasked with putting their own stamp on these toppings to create a truly one of a kind pizza.
‘One of my favourite things about cooking is gathering your friends and peers together and I’m excited to welcome a group of chefs to Radio Alice who are each doing exciting, inventive things in the kitchen. It’s been years since I’ve been in the kitchen with Jeremy, whilst Meriel’s efforts to transform the face of vegan eating in London are legendary, as is Doug’s work on zero-waste. I can’t wait to see what each chef will come up with.’’ says C0-founder Matteo Aloe.
Radio Alice’s pizza collaboration will be available at both Radio Alice Hoxton and Clapham and will run from 14th May – 17th June, with each pizza taking residence on the menu for one week at a time.
