The Seren Collection, a unique collection of high quality hospitality venues in South West Wales which includes Coast Restaurant in Saundersfoot have announced Head Chef Will Holland will depart the group in the Autumn for pastures new.
Will moved to Pembrokeshire to join us in Saundersfoot in April 2014 and with owners Neil and Zoe Kedward opened Coast Restaurant. The curved cedar clad purpose built restaurant sits on the shores of Coppet Hall beach with a menu that reflects Wills contemporary style of cooking and dishes prepared from the larder of the best Pembrokeshire and Welsh produce.
During his time in Pembrokeshire, Will has secured numerous accolades including AA ‘Restaurant of the Year in Wales 2015-2016’, 2 AA Rosettes for culinary excellence, as well as recognition in The Good Food Guide and The Michelin Guide. Will has had a hugely positive impact on the thriving Welsh Food Scene through his involvement in local Food festivals, the Welsh Culinary Association, local colleges and even as Chef Ambassador of the ‘Clink’ Restaurant at HMP Cardiff. Last year we were delighted to see Will receive personal recognition when he was awarded the Craft Guild of Chefs ‘UK Restaurant Chef of the Year 2016’.

The Seren Collection have now started a national search for an outstanding Head Chef to take over the reins at Coast Restaurant in the early Autumn. With further investment planned at the restaurant through the Autumn and Winter, the new Head Chef will be given the chance to reinvent the offering and become a partner in its future success.
