Dickie Fitz, the all-day Australian brasserie in Fitzrovia, is pleased to announce the appointment of Jon Coates as Head Chef, bringing with him 17 years’ of experience and expertise from across the globe to his newly appointed role.
Jon joins the team from his previous role as Sous Chef for business members club Pavilion, here he worked in tandem with Michelin-starred Chef Adam Simmonds, launching the restaurant and maintaining the high standards of his 15-strong chef brigade.
Jon’s career began in a series of London restaurants following his studies of culinary arts, which eventually led to working at the Michelin-starred kitchen of Reads in Faversham. His next venture took him further afield, relocating to Sydney, Australia to work at the renowned MG Garage before embarking on travels around the country, then to Asia and America, expanding his culinary knowledge.
In New York, Jon joined Thomas Keller’s then-recently opened Per Se restaurant working under Chef Johnathan Benno. He returned to London and was appointed as Head Chef for ETM Group before cooking for various Olympic officials during London 2012 as Agency Sous Chef for HHC London.
At Dickie Fitz, Jon will be working alongside Executive Head Chef Matt Robinson and will oversee the Pacific-inspired menu which will no doubt be shaped by Jon’s time in Sydney. The menu, which caters from breakfast through to dinner, will include a special Australian-inspired take on weekday breakfasts and weekend brunch.
