Ingredients
- Avocado
- Red onion
- Cherry tomatoes
- Lemon
- Vegan mayo
- Paprika
- Salt
Method
- Peel and chop the avocado into chunky pieces.
- Chop the red onion and cherry tomatoes finely.
- Add the avocado, onion and tomatoes into a mixing bowl.
- Squirt a small amount of fresh lemon juice into the bowl and add a sprinkle of salt.
- Depending on how you prefer your guac add 2-4 tablespoons of vegan mayo and stir well.
- Spoon out of the mixing bowl and onto a serving plate/bowl and garnish with paprika.
- Voila!
