Ingredients
- 1 box Fry’s Blackbean, Quinoa and Chia Bites
- 20g pomegranate seeds
- 50g assorted nuts, roasted
- Bunch of fresh mixed lettuce leaves
- Bunch of rocket
- Bunch of mint
- 100g mange tout
- Salt and pepper to taste
- Vegan Ranch Dressing
Method
- Cook the bites according to the back of the box. Roast the nuts in a preheated oven at 225C for about 4 minutes. These can be put into the oven together to save time.
- Toss the lettuce, rocket and mint, pomegranate seeds, nuts, and mange tout together and place into a large bowl. Add the bites and drizzle dressing over them with salt and pepper to taste.
- Vegan Ranch Dressing: Combine 3 tbsp egg-free mayo, 1 small lemon, squeezed (whisk in until thinned) and spices & freshly chopped herbs to taste in a blender or food processor.
