An exciting modern European menu with an exquisite raw section from ex-Ivy Club Head Chef Jamie Dobbin; a sensational cocktail list where the Negroni and G&T take centre stage; ‘dude’ bar food; and interiors by David Collins Studio. That’s ETM’s latest venture – One Canada Square – an impressive restaurant and cocktail bar situated on the ground floor of the iconic building from which it takes its name.
The Design
David Collins Studio has created an elegant space with highlights of the 30-cover bar and 60-cover restaurant including a grand staircase and three imposing columns that separate the bar and restaurant whilst linking it to the 30-cover Mezzanine (above).
Seating, inspired by elements of vintage car design, adds to the art-deco-reminiscent style. Ribbed detail upholstery in ox-blood leather for the bar and British racing green for the dining room with contrast piping is teamed with herringbone-patterned table-tops and oak timber flooring, creating a classic and comfortable space.
Ascend the feature staircase to the Mezzanine complete with its own private bar and providing a lofty location overlooking all the downstairs’ action.
The Restaurant
Chef Jamie Dobbin has merged food traditions, techniques and flavours from Europe, the USA and Asia, to bring the very best out of the seasonal, home-grown produce that ETM Group champions.
The Raw selection allows star ingredients to shine. Delicious British-sourced meats and seafood fresh from Billingsgate Market – just a few hundred metres from the kitchen door – are beautifully presented in the form of ceviche, carpaccio and tartare dishes that stimulate the palate and set the tone for a meal bursting with flavour. Vegetarians can also opt for the innovative Allotment dish that takes favourite garden vegetables and recreates the moment they’re plucked from the ground using ‘olive soil’.
The wine list has been given a high-tech touch and arrives at the table in tablet form. Customers can scroll through sommelier suggestions, view full descriptions and peruse both familiar labels and fine wine varieties, available both by the bottle and the glass thanks to the addition of the restaurant’s Enomatic wine dispenser.
The Bar
An elegant and stylish venue requires a drinks list to match and One Canada Square will put a strong focus on serving classic drinks of exceptional quality.
The crowd-pleasing G&T has been given special treatment with a list of signature serves from a variety of premium gin brands. A continental Negroni selection also gets a punch of personality using varying vermouths, gins and garnishes to create Italian, French, Spanish, English or American styles of this cult classic. One Canada Square also boasts a 46-strong range of whiskies from around the world that includes American bourbons and ryes, Irish whiskeys and Japanese malts as well as varieties from the best Scottish distilleries
Stay comfortably seated and hail the unique cocktail trolley (available from the end of November), brought round to individual tables at the beginning and end of guests’ dining experience.
Hunger is staved off with bar food featuring Stateside-style ‘dude’ dishes. Bite into satisfying burgers, ‘dogs’ and subs with a cold draught or bottled beer, or enjoy vamped-up bar snacks of chilli beef; porcini and gorgonzola arancini; or shrimp and bacon croquettes with grain mustard mayo.
Breakfast & Saturday Brunch
Expect brisk business breakfasts (7am-11am Monday–Friday) and leisurely Saturday brunches (from 9am-5pm) with morning menus that feature a wide variety of egg dishes, fluffy pancakes, house-roasted granola, or rolled porridge with Muscovado sugar. There’s a selection of more substantial dishes on the brunch menu such as salads, surf and turf, and classics like fish and chips, mac ‘n’ cheese, and steak tartare.
