When it comes to prime cooking equipment, there are few brands in the UK that supply fryers from two of the world’s renowned manufacturers. In the case of Dawson Foodservice Equipment, their range of over 50 units from Mareno and Rosinox are the products of choice for many high specification schemes and projects as they offer consumers a myriad of choice.
With units to suit all types of kitchen and catering facility Managing Director Mike Butt explains what differentiates these work horses of the kitchen and how consumers can identify quality and value when choosing a fryer/supplier.
Despite the growth in healthy eating deep fat fryers continue to play a fundamental role in most, if not all locations, whether in the public or private sector.
They come in all shapes and sizes, from small counter top models for low production requirements (less than 30kg of fries per hour) to floor standing high production units that are often bought in pairs for greater flexibility.
Typically Fryers are grouped and rated by three basic characteristics, power, tank capacity and basket size.
As units are in most cases in regular, if not constant use, build quality is very important.
Today manufacturers including Mareno and Rosinox, who between them have over 150 years of manufacturing expertise, continue to develop high specification medium and heavy duty units that offer maximum output and the increasingly important ingredient of extended oil life technology.
Our recently launched Mareno 70 series is one of a new generation of fryers, that offers excellent levels of hygiene through weld free, one piece pressed deep drawn tanks with wide radius curves for easy cleaning, a unique tapered tank design allows for the expansion of the oil and a large cold zone in the lower part of the tank to prolong oil life.
High performance stainless steel burners are located outside the tank in gas models and heating elements inside electric units can swivel 70° for perfect cleaning. Gas models feature Piezoelectric ignition and all models feature a safety thermostat.
Important points to consider when choosing a fryer.
- Does the unit feature a safety thermostat as standard
- What is the units tank size and production capability
- What is the power input/output of the unit
- Understand what is meant by high power/efficiency ratio
- Does the unit have an oil filtration system, or can one be added
- Advice on the right kind of unit for your facility is only a phone call away
