This February 28th the team at Viet Grill and Cây Tre will be getting into the spirit of Shrove Tuesday and flipping some Vietnamese pancakes for one day only. Founder Hieu Bui has designed a ‘Banh Xèo’ pancake, a take on the traditional Vietnamese dish. A sizzling coconut and turmeric rice pancake will be filled to the brim with Red Sea Prawns, Pork belly, Mung bean sprouts and Button mushroom, packing a fresh and flavoursome punch.
‘When I opened the first Cay Tre in 2003 my mission was to bring true Vietnamese street food to London and The Banh Xeo is a lesser known Vietnamese classic that deserves to be celebrated’ says founder Hieu, ‘Pancake day is a true British tradition, quirky and centred on food so I thought it was only right that we celebrated it with our own Vietnamese stamp.’
The ‘Banh Xèo’ will be available at Cây Tre Soho, Cây Tre Hoxton and Viet Grill Shoreditch alongside their usual offerings such as ‘make it your own’ Pho and Bun sa bowls filled with your choice of meat or vegetables and handmade noodles (flown into London twice a week) truly transporting you to the streets of Hanoi.
