Hot on the heels of the Revolution brand being announced as winner of the City Bar Dining category at this year’s prestigious Menu Innovation and Development (MIDAS) awards, leading national bar operator Revolution Bars Group is launching their food menu with an emphasis on fresh, interesting, and quality chef cooked dishes that reflect the brand’s fun and quirky personality.
Further developing strong food sales
The new menu has been created by the Revolution brand’s Executive Chef Mark Rush, and aims to further develop the already strong food sales across the brand’s sites. With some venues bringing in £15,000a week through food, the new menu will capitalise on this opportunity, with lunchtime identified as a key focus.
Mark Rush commented: “After four years of double digit like for like growth for our food offering, it was vital that the new menu contained dishes that would excite and interest the customer, while improving the quality even further, to help us continue to build on this aspect of our business.
“Whenever we develop a new menu, we focus on one section in particular, as we believe this makes it easier for our teams to train and know the menu front to back. It also means that we focus on the real detail in every dish, so the result is so much better for the customer. This time, the focus was on lunch options, so we’ve introduced a variety of flavoursome, hearty burritos, wraps and sandwiches for customers joining us during the day.”
Research and feedback
In line with this, Revolution’s new menu features an improved range of burritos, flatbreads, sandwiches and wraps, introduced after extensive research into sales and customer feedback. For instance, the content and cook methods for the burritos were completely revised after a ‘burrito eat-a-thon’ was held across the best independents in London and Manchester Revolution bars, to determine which flavours and ingredients worked best.
The results include a pulled salt beef burrito, and a smoky aubergine option, both built using guacamole, black beans, Revolution’s ‘smokinnaise’ sauce, spicy red rice and cheese, with tortilla chips and dips.
Americana hipster trend
The Revolution brand’s menu is heavily influenced by the Americana hipster trend sweeping the UK, demonstrated by the brand’s new Macphilly Cheese Steak sandwich, incorporating pulled salt beef, smoked cheddar, mac ‘n’ cheese and French’s mustard inside a stonebaked ciabatta. Further examples include the cherry cola chicken wrap, and the Triple Overload burger. This monumental burger features beef, buttermilk chicken and pulled pork inside a triple brioche, with Armageddon sauce (based on a Korean Sriracha sauce), BBQ crackling puffs, smoked cheddar and garlic sauce.
Sharer options
With the post-work and party sessions hugely important to Revolution, the brand has completely revised its sharer options, introducing two crates that showcase a variety of the best ingredients and products on the menu; the Street Food Crate and Deli Crate.
