A lot of people don’t eat commercially prepared pâté for the fear of what’s hidden inside. This recipe is easy to prepare, one of my absolute favourites and I can guarantee, its flavour cannot be bettered. It also uses low cost ingredients.
This quantity makes approximately 750g pâté.
Ingredients
- 3 rashers un-smoked bacon, rind removed and finely chopped
- 1 large onion, finely chopped
- 2 cloves garlic, crushed
- 2 tsps dried or 1 tbsp freshly chopped thyme
- 125g butter
- 450g chicken livers, well washed, trimmed and roughly chopped
- freshly ground black pepper and a little salt to taste
- 2 – 3 tbsps brandy
- bay leaves for garnish
Cooking Instructions for 1100 watt oven
Place the bacon, onion, garlic, thyme and half the butter into a 1 litre oven-proof dish or casserole. Cook for 2 – 3 minutes on HIGH power using an 1100 watt oven until the onion is tender, stir well halfway through the cooking time.
Stir in the chicken livers and black pepper. Re-cover dish and continue cooking for 7 – 8 minutes on a LOW power (650 watts), stirring occasionally until all the chicken liver has lost its pinkness and is cooked through – though don’t over-cook otherwise the liver toughens.
Leave to cool for a couple of minutes. Set up the food processor, pour the liver mixture into it, stir in brandy and process until fairly smooth – but not too much. Adjust seasonings to taste maybe adding a little salt, especially if the bacon isn’t salty. Pour into a large mould or 4 – 6 smaller individual dishes and refrigerate until top is set.
Melt remaining butter in a small ovenproof dish for 30 seconds on HIGH power. Garnish the pâté with bay leaves and pour over the melted butter pâté.
If possible refrigerate overnight to bring out all the flavours.
1500 watt oven
Cook bacon etc., for 2 – 3 minutes,
on MEDIUM power (70% – 1050 watts),
stirring well after 2 minutes.
After adding chicken livers continue cooking
for 6 – 7 minutes on LOW power
(50% – 750 watts).
1850 watt oven
Cook bacon etc., 2 – 3 minutes on
LOW power (50% – 925 watts)
stirring well after 2 minutes.
After adding chicken livers continue cooking
for 5– 6 minutes on LOW power
(50% – 925 watts).
Accompaniments
Serve with crunchy melba toast or fresh crusty bread.
