To assist the General Manager in managing the unit to agreed company standards and ensure that the restaurant has consistent and high levels of customer service. To help manage costs and meets forecast as set out in the budget and to be responsible for grooming a competent team of shift leader, part-time and full time waiting staff, to monitor and work closely with the head chef and his groomed team of Sous chef, Chef de partie, Commis chef and KP’s when the General Manager is not on duty, in order to meet the future needs of the business.
