Next Monday, Simon Hulstone, chef patron of Michelin-starred restaurant The Elephant, Torquay will front a Chefsperience Master Class on using sustainable and seasonal seafood. The event is part of the new Chefsperience professional development programme targeted at chefs who wish to enrich their skills base by learning tips and techniques directly from top professionals.
Drawing from the work he does on his farm and with supplier Norwegian Seafood, Chef Simon will demonstrate how to prepare dishes with produce that not only supports the well-being of our planet but also cuts out food miles and cuts down delivery charges.
Chefs who attend Chef Simon’s Chefsperience demo will learn how to prepare three inventive dishes: Glitne Halibut with parsnip puree, cider vinegar butter sauce; Frozen at sea cod, salted toffee pea soup, hogs pudding and summer greens, and Roasted Salcomb Scallops, Devon black pudding, windfall apple, and smoked eel Gribiche sauce.
Cyrus Todiwala, whose iconic restaurant, Café Spice Namaste, will be hosting the Master Class and serving lunch as part of the programme, said, ‘During the last few years, we have been running a series of Chef Demonstrations and Master Classes under the banner of Adventure Gourmet.
‘In order to take the ethos forward and to expand on our ability to help develop the next generation of chefs we have created ‘Chefsperience’. Chefsperience will be much more than just a cookery school; it will develop participants across a broad curriculum of skills that they need to develop them into outstanding chefs.
‘Skills such as classic and cutting edge culinary techniques, business skills like budgeting and marketing, personal skills such as time and stress management and wider attributes like social media and presenting.’
Future Chefsperience Master Classes will feature Chantelle Nicholson, chef patron of Tredwell’s and Romuald Feger, Executive Chef of Four Seasons London Park Lane.
Chefsperience is also running a series of cooking classes for kids in July and August. For more information click here
