Acclaimed chefs Ross Gibbens and Michael Kennedy are set to open a new modern British brasserie in White City Place this April.
The pair have worked in some of the UK’s leading kitchens including Le Manoir aux Quat’Saisons, Launceston Place, The Square and The Vineyard in Berkshire. More recently Ross was Head Chef at Dabbous and Michael his Sous Chef.
Their latest venture, Wellbourne Brasserie, will feature a unique all-day dining menu that is simple, restrained and affordable yet aims to exceed expectations with the quality of ingredients and attention to detail Gibbens and Kennedy will bring.
The menu will include the likes of homemade crumpets served with Wellbourne Brasserie’s own hot smoked mackerel for breakfast and mains such as Veal Holstein; hens egg, lilliput capers & smoked anchovy.
The team have imported a specialist Mibrasa charcoal oven from Spain and there will be a variety of dishes cooked over hot coals such as the delicious 50 day salt aged Simmental beef & wild juniper and Ross-on-Wye green asparagus, sunflower seed praline & salted butter.
There will be a Plate du jour, which includes dishes such as Bavette, chips & aioli. Vol au vents will be a signature of the brasserie and be available as appetizers, varieties will include English broad beans, ewe’s cheese & mint, Salt cod brandade and Duck riellettes.
The brasserie will be relaxed and informal, but the quality and efficiency of service will again aim to exceed expectations. The front of house will be headed up by Manuel Muzzin, who has worked at numerous leading venues including The Square and Corrigan’s Mayfair.
The 40-seater Brasserie will open Monday, 16 April. It boasts an alfresco south facing terrace overlooking the Green where guests can dine and enjoy cocktails such as the Brasserie’s signature Fennel Sazerac, a 30-seater lounge bar and the Charles Packe
private dining room with bespoke enomatic machine, which is named after Wellbourne’s fine dining space in Spain.
Head Chef Ross Gibbens said: “We are thrilled to be opening Wellbourne Brasserie in White City Place. Our modern British brasserie offers an affordable and unique style of all day dining. It is refined and restrained but with a real focus on quality.
“We also have a great wine and cocktail list and our south facing Terrace will be the perfect spot for alfresco dining and drinking.”
Wellbourne Brasserie is the latest opening within the Wellbourne Group. Last year Wellbourne Clifton, an informal neighbourhood restaurant in Bristol, opened its doors followed by Wellbourne Salardu, a seasonal fine dining and après ski restaurant in the Spanish Pyrenees.
Each venue has its own distinct offering but the ethos of quality and informed dining in an informal environment is key to each.
