Calabash Hotel in Grenada has appointed Nicholas Cherman as Executive Chef, marking his return to the property following several years working in the UK.

The 36-suite, family-owned Relais & Châteaux hotel is located on Grenada’s south coast overlooking Prickly Bay and operates three restaurants: Rhodes, Nori and The Beach Club.
Born and raised in Grenada, Cherman’s interest in cooking began through his grandmother before he started working in kitchens across the island aged 17.
He joined Calabash in March 2020 as Chef de Partie and progressed to Chef de Cuisine at Rhodes Restaurant in 2021.
Cherman left Grenada in November 2022 to develop his experience overseas, joining fellow Relais & Châteaux member Gilpin Hotel & Lake House in the Lake District.
He worked as Sous Chef at the hotel’s one-Michelin-starred SOURCE restaurant before becoming Senior Sous Chef at The Vineyard Hotel & Spa in Berkshire, another Relais & Châteaux property.
At The Vineyard, Cherman worked under Executive Chef Tom Scade while continuing to develop his experience in luxury hotel and restaurant kitchens.
His return to Calabash will see him oversee the hotel’s culinary programme and introduce refreshed menus across its restaurants, combining techniques developed during his time in England with Grenadian ingredients and cooking traditions.
At Rhodes, dishes will include Calabash Gin Cured Tuna, L’Esterre Spiced Duck Breast and Red Snapper Bouillabaisse.
The Beach Club will offer a more informal menu spanning small and larger plates, pizzas and beach dishes, including Grenadian Jerk Chicken Club, Caribbean Spiny Lobster and Grenadian Chocolate & Caramel Tart.
Cherman will also focus on strengthening relationships with farmers, fishermen and producers across Grenada.
The hotel’s kitchens source approximately 80% of their fruit, vegetables and spices from L’Esterre, the Garbutt family’s organic-certified farm in the north of the island.
His appointment comes as the Garbutt family approaches 40 years of ownership at Calabash and continues to invest in the property.
Six new suites, including two Hillside Penthouse Suites, have been introduced for the 2026/27 season, representing the hotel’s first addition to its accommodation inventory since the 1990s.
