Bar Prince at The Balmoral has launched Mythical Legends, a new cocktail menu inspired by Scotland’s folklore.

The new menu follows last year’s Connected Icons and explores legendary creatures and stories including unicorns, selkies, witches, dragons and kelpies.
Overseen by Head Bartender Mattia Rovaris, the menu has been developed by the Bar Prince team, with each signature cocktail created by a different mixologist and inspired by a separate Scottish legend.
The concept extends beyond the drinks themselves.
Bespoke illustrations accompany the menu, while each copy has been handcrafted by Edinburgh’s Crawford Bookbinders using traditional techniques.
Bar Prince has also introduced a Mythical Legends Scent Mist designed to complement the menu, drawing on notes including cedarwood, chamomile, sandalwood, Scots pine, citrus and spice.
Among the cocktails is The Untamed One, inspired by Scotland’s national animal, the unicorn, and made with Scottish vodka, coconut water, white chocolate, banana and lime leaf.
Double Identity takes inspiration from the selkie and reinterprets the whisky sour using coastal Scotch whisky, honey, citrus and spice.
Kingdom’s Cauldron draws on the tale of the Witch of Fife, combining whisky, botanicals, chocolate, vanilla and caramel.
Other serves include Messy-Nessie, a whisky highball inspired by the Loch Ness Monster, and Fairy Queen, a Mai Tai variation made with aged rum, roasted Brazil nuts and dark cacao.
Mattia Rovaris, Head Bartender at Bar Prince, said: “Building on the success of Connected Icons, Mythical Legends gave our team the opportunity to tell a new chapter of Scotland’s story through the lens of folklore. Each cocktail has been created by a different member of the bar team, making the menu a true collective of ideas, creativity and personal interpretation. Paired with bespoke illustrations and scent, we’ve created an experience that invites guests to discover something new with every serve.”
The menu continues Bar Prince’s focus on storytelling-led drinks experiences, using Scottish history and culture as the basis for its cocktail development.
