Shifting to a circular foodservice economy

Sourcing food locally, avoiding single use plastics and reducing food waste are all key components for sustainable foodservice. But what about the equipment the food is stored, prepared and cooked in?

The journey towards a more sustainable industry is ongoing, shifting from a linear to circular economy. Months of time and consideration go into procuring equipment, but it only takes seconds to throw something away. Many of those items could be used elsewhere, and generate revenue.

For the foodservice sector, this means having a look around the kitchen and understanding what residual value equipment holds. Instead of sending surplus items to landfill, unwanted items often warrant a new lease of life.

Paul Fieldhouse, foodservice business development consultant at Ramco, comments on the circular economy shift: “A lot of equipment ends up in landfill because businesses don’t know about its true value, and it seems like an easy option.

“Ramco is here to change that route, raising awareness in the value of previously used kitchen items and extending product lifecycle, end of lease doesn’t mean end of life.”

Ramco’s value finder tool gives an overview of the kind of assets the auction house has found a home for in the past, combi ovens, refrigerators, and twin tank fryers to name but a few. Research recently conducted by Ramco revealed £59 billion of perfectly good equipment sitting idle in organisations across the country. That’s an average of around £10,000 per organisation.
