Michelin-starred chef Tom Sellers will be teaming up with Anglo-American street food specialists Sub Cult to create the Sellers Sub. The Sub will be available every weekend from Saturday, 3 December until Sunday, 18 December 2016 (Saturdays at Brockley Market and Sundays at Maltby Street Market) from the Soul Roller camper van. On Saturday, 3 December only, Tom and the Sub Cult team will be at Beavertown Brewery, Tottenham Hale.
The Sellers Sub will feature Asian-fusion duck sausage, Gruyère cheese, cucumber relish, fermented ginger mustard, scallions, watercress and 5-spice salt. The Gruyère has been sourced from Mons Cheesemongers, and the duck from The Butchery, both with stalls at multi awardwinning Brockley Food Market.
Two-time winners in the British Streetfood awards, Sub Cult, like Tom, are known for using British seasonal produce and for their individual flavour combinations. As well as Tom’s creation, they will also be serving their classic sandwiches, such as the Rodeo Sub (aged sirloin cooked rare, truffle mayo, confit shallot jam, provolone picante and pickled Serrano chilli), and the Sub Marine (seared scallop, seasoned roast pork shoulder, calamari, rocket, lemon and parsley mayo).
This will be the second time Sub Cult founders, Ben Chancellor and Gaz Phillips will have joined forces with a Michelin-starred chef. Earlier this year, they teamed up with chef Tom Aikens for a three-day pop-up at his restaurant Tom’s Kitchen Chelsea.
Tom Sellers is the chef/patron of Michelin-starred Restaurant Story in Bermondsey, as well as being the Executive chef at The Lickfold Inn in West Sussex. In May 2016, Restaurant Ours in Knightsbridge opened with Tom as the Culinary Director.
