London-based restaurant group Village (previously Village London), comprising The Riding House Café, Village East and Rail House Café, are pleased to announce the appointment of two new key chef roles within the team. Autumn 2016 sees the appointment of Etienne Bruwer as Group Executive Chef at Village, where he will oversee the kitchens at all three restaurants. Additionally, Ilias Patsios has been appointed as Head Chef at The Rail House Café which will open February 2017.
South African born Etienne Bruwer began his career in London cooking at Terence Conran’s Fishmarket (Great Eastern Hotel) before moving to France where he gained experience working with in highly coveted international kitchens from Michelin starred chefs including the Pourcell Brothers and Pierre Gagnaire. Upon returning to the UK, Bruwer was Senior Sous Chef to Andre Garrett at Galvin at Windows, Park Lane (*1. Most recently Bruwer held the position of Group Executive Chef for Rhubarb Food Design (London) for the past three years.
As Executive Chef, Etienne’s role will involve the creation of the new dining concept at Rail House Café, whilst continuing to maintain the Village restaurants reputation for meticulously sourced, high quality, honest and wholesome food.
36-year-old Ilias Patsios, originally from Greece has worked in some of London’s most revered restaurants from; Alain Ducasse (*3) at the Dorchester, Orrery (*1) and Rhodes 24 (*1). Patsios joins The Rail House Café from The Arts Club, Dover Street, Mayfair where he was Senior Sous Chef since 2013.
