Originally from Preston in Lancashire, John moved to London in 2003 as an apprentice at the National Portrait Gallery’s Portrait Restaurant. Two years later he returned home to work at the one Michelin-starred Paul Heathcote at Longridge. He later joined Marco Pierre White’s pub group outside Oxford, working his way up to Sous Chef at The Talkhouse. John took up his first Head Chef role at Newbury Manor Hotel winning their second AA Rosette, followed by The Crab in Chieveley. In 2015 John returned to London where he worked at Ham Yard Hotel and the Zetter Hotel, joining Northbank as Head Chef in October 2016.
John is a classically trained chef and references Marco Pierre White and Pierre Koffman as his culinary inspirations. He considers his style to be Modern British with traditional French influences and his favourite ingredient is crab. Outside of the kitchen, John enjoys spending time with his young family, practices Ju Jitsu and eats out as often as possible, whether it be a BBQ or fine dining.
Located next to the Millennium Bridge on the north side of the Thames, Northbank was created and opened by Christian Butler (ex-Adam Street and Baltic) in September 2007. Northbank offers a Modern British menu with a Cornish influence showcasing ingredients sourced from Christian’s hometown of Falmouth and surrounding areas of Cornwall in the south of England. Fresh fish is delivered daily from day boats off the Cornish coast.
