A new concept restaurant is combining a Michelin-recognised chef, Sardinian producers and more than 65 years of experience to bring Sardinian-influenced Italian food to North London.
The new restaurant, Bosa, is named after the owners’ town on the island of Sardinia and offers a wide range of typical Italian food alongside traditional Sardinian recipes.
Angelo Sanna, Managing Director of Bosa, said that he wanted to give people the opportunity to experience the delights of an Italian childhood on the island.
“When our guests come to visit us, we want them to feel like they’re entering our home. Italian hospitality is famous and we want everyone to taste food like our mothers prepared, he said.
“That’s why we’ve created a menu that gives you the best of both worlds; traditional Sardinian food with well-known Italian favourites – all just like Mamma made!”
Bosa’s leadership team calls on its extensive experience within hospitality to deliver this new restaurant, combining a deep knowledge of the industry with innovative approaches to create a unique experience.
Angelo has dedicated more than 30 years to the hospitality industry and has worked across four continents as a chef, waiter, sommelier, restaurant manager and importer, while Bosa’s Operations Director, Claudio Peddis, brings 20 years’ experience developing business processes and refining the customer experience for high-profile chains such as Strada and Côte.
Bosa’s Executive Chef, Monserrato Marini, is well known for leading Essex based, Ristorante I Paparazzi, into the Michelin-guide, and also featured on Celebrity Masterchef.
Angelo also said that the restaurant’s guests are offered the opportunity to sample award-winning cheeses, oil and meat not previously found in the UK.
“We decided early on that we wanted to make sure we were delivering high-quality ingredients but also to engage in ethical trade so that we knew our suppliers were really benefiting from the business we’d bring, so we’ve cut out the middle man and now deal directly with them, said Angelo.
“There are some amazing artisan olive oil, cheese and meat producers in Sardinia and beyond and we’re now working directly with them to sell their produce in the UK for the very first time.
“We want to offer something unique to our customers and by drawing on both Sardinian history and culture, we’ve created something you can’t find anything else in London.”
