Pidgin is delighted to announce the appointment of Dan Graham as head chef.
Dan joined the team in January 2016 following positions at Dinner by Heston Blumenthal, L’Autre Pied, and Odette’s, and has been instrumental in driving the kitchen and the food at Pidgin forward, seeing glowing reviews from the Financial Times and the Telegraph, and giving steadfast, energetic and creative support to head chef Elizabeth Allen and the team.
Pidgin opened in July 2015, the next step for James Ramsden and Sam Herlihy’s Secret Larder supper club. They wanted to take the spirit of a supper club – a weekly changing set menu, wine and cocktail list, and turn it up to 11. Rave reviews from Giles Coren in the Times, Marina O’Loughlin in the Guardian, TimeOut, Chris Pople and many others has cemented Pidgin’s place as one of the most innovative and exciting restaurants in London – in over a year the kitchen hasn’t repeated a dish from its weekly changing menu.
James and Sam say: “We’d like to thank Elizabeth for all her incredibly hard work this last year. She’s been an important part in making Pidgin what it is today and we wish her all the best in her next role. It’s a really exciting time for us at Pidgin and we can’t wait to develop new menus with Dan and his team and continue to surprise and excite customers with what we feel is a unique offering in London – an entirely changing menu and wine list each and every week. Dan has an extraordinary creative spark and we’re looking forward to seeing him continue to take Pidgin forwards.”
Elizabeth says: “Heading up the kitchen at Pidgin from its inception and through its first year has been an incredible and challenging experience and I’m extremely proud of what I’ve achieved. I’m looking forward to the next step in my career and wish James, Sam, Dan and team all the best for the future.”
Dan says: I’m really excited to be taking on the role of head chef at Pidgin and to continue the improvements and innovations already made. I am inheriting a great team with the potential to be even better. It’s a real team effort at Pidgin, from creating the weekly changing menus with Sam and James to getting everyone involved with realising the ideas. It’s an incredibly challenging and exciting environment and I can’t wait for the next chapter.
