Ingredients
- 1 box Fry’s Chicken-Style Nuggets
- 4 tbsp Peanut butter
- 1 tbsp Chili paste
- 1 tsp Ground turmeric
- One whole stick of lemongrass
- 2.5cm piece fresh ginger
- 1 tbsp sunflower oil
- 1/4 bunch fresh coriander
- 6 tbsp Unsweetened coconut milk
- 2 tsp sugar
Methods
- You will need 20 wooden skewers (12 centimetres) pre-soaked in cold water.
- Prepare the marinade: peel and dice the ginger in to small 3mm cubes.
- In a bowl, mix half of the chopped ginger, sunflower oil, turmeric, sugar and the finely chopped lemongrass.
- Place the Strips on to skewers and brush with the marinade.
- Leave to marinate for 20 minutes.
- Place the rest of the chopped ginger in a saucepan and add the coconut milk, chilli paste and the peanut butter.
- Bring to the boil.
- Cook the skewers on a griddle or in a hot frying pan with a little oil.
- Serve with the satay sauce and enjoy immediately.
- Add the freshly chopped coriander to finish.
