The gluten free range comes in three varieties; two neutral pastry cases which come in an 10cm sized case and a 4cm canapé size as well as a 10cm sweet pastry case. All three products are gluten and dairy free and are available to the UK foodservice market. The gluten free range has a handmade rustic look to them with a buttery crumbly texture.

Inundated with requests to develop a gluten and dairy free range
“Over the last few years we have been inundated with requests to develop a gluten and dairy free range. We have taken our time to develop this range to ensure close to perfection and it has been a learning curve for all involved. Plus with the strict manufacturing requirements surrounding this sensitive issue we have had to develop a site specifically for this process.
“We plan to launch initially to the UK foodservice market to gauge reception and demand. So far we have had some great reviews already and we hope to expand the product range and the target market as well. We are aware that this is a growing industry sector with studies showing that in Europe coeliac disease has increased as much as 4 times in the last 30 years.”
Gluten-free market to grow by 46% to £561 million by 2017
According to information presented at the Food and Drink’s Innovation Free-From conference the UK gluten-free market is forecast to grow by 46% to £561 million by 2017 and it has already seen a double-digit growth since 2008.
In addition in 2012, total free-from sales in the UK were valued by Kantar Worldpanel at £288m and this figure has grown by more than 25% during the last year.
