The Kings Head in Cirencester has appointed its Executive Chef. Wayne Sullivan will be overseeing the overall culinary direction of this brand new hotel when it opens its doors to the public in the summer of 2014.
Working alongside The Vineyard Group’s Michelin starred Executive Chef Daniel Galmiche, Wayne will lead the kitchen brigade and manage all aspects of the hotel’s food and beverage operations.
The Kings Head has been widely described as one of the hottest Cotswold hotel openings of 2014. Closed for redevelopment in 2007, The Kings Head will re-open as a modern, elegant and stylish hotel bursting with character. Amongst its many amenities, the hotel will offer 45 unique bedrooms, an exceptional wine list, a subterranean sanctuary spa, extensive event space and an outstanding restaurant.
Speaking on his appointment, Head Chef Wayne Sullivan said: “I am utterly thrilled to be joining the team at The Kings Head. The dynamic vision of the team behind the opening is immense. The interiors coupled with the overall concept will result in a hotel like no other in The Cotswolds. My aim is to put The Kings Head on the culinary map and to build an excellent reputation within the town and furthermore, the Cotswolds itself.”
Wayne has a rich culinary background having worked in some of world’s best restaurants, including Marcus Wareing’s Petrus and at The Hotel Wheatleigh in Massachusetts, USA. A Cotswold chef through and through, Wayne is well known in the area as a Consultant Chef having worked with the teams at Calcot Manor, The Wesley House, Hotel Du Vin in Cheltenham and at The Bell at Sapperton. Famously Wayne was Head Chef at the AA 2 Rosette awarded restaurant, Parkers Brasserie, when it was named by Cotswold Life as Restaurant of the Year. Wayne has also spent time working as a Senior Sous Chef at The Montpellier Chapter.
The Grade II listed King’s Head building has been undergoing an extensive multi-million pound restoration programme to address decades of disrepair to the historic fabric. As part of the renovations, a widespread archaeological excavation was carried out in the cellars, uncovering a Roman Mosaic dating back thousands of years. Final fit-outs are currently underway including the bedrooms, which will each be entirely unique in their design yet in keeping with the character of the historic building.

The Kings Head is due to open to the public in the summer of 2014. The 45-bedroom property will be run by General Manager Stephen Mannock and his team. Closed for redevelopment in 2007, The Kings Head is a modern, elegant hotel which boasts an exceptional wine list and an all day dining option offering the very best of modern British food.
