Celebrate Bacon Connoisseurs Week, with an earthy lentil dish completely enlivened and transformed with bacon & lardons. Lentils can be seen as a bit boring and ‘worthy’, but cooked in this way and then tossed in a punchy mustard dressing they are delicious. Serve with grilled or roasted chicken or barbecued lime marinated flank steak.
