Rhubarb Hospitality Collection (RHC) has partnered with Greystar, a global leader in rental housing, to launch two new quick-service restaurant concepts at Chapter London Bridge, a striking new 950-bed purpose-built student accommodation development beside The Shard and a recognisable addition to the London Bridge skyline.

Open to the public as well as the student community, the scalable formats comprise of ‘Journal’, a contemporary coffee shop, and ‘The Chop’, a chopped salad and sandwich outlet.
Launching later this month, Journal will open daily from 6:30am until 5pm. The 74 sqm site offers 30 indoor covers plus pavement seating and will serve Modern Standard specialty coffee alongside pastries, cakes and breads from celebrated partner Lockdown Bakehouse.
Opening shortly after and next door is The Chop, a fresh take on the classic salad bar, offering made-to-order, grab-and-go chopped salads served in bowls or layered into bread as deli sandwiches. Vibrant combinations include the Prawn Star (harissa shrimp, mixed quinoa, edamame, broccoli, peas, cucumber, sunflower seeds and green goddess dressing) and the Fennel-icous (fennel salami, romaine lettuce, chickpeas, red onion, mozzarella and creamy balsamic). The 11am until 4pm operation will also offer a range of hero sides and sweet treats.
Both brands put sustainability at the core of their offer with seasonal sourcing and partnerships with The Felix Project and Too Good To Go to reduce food waste.
Within Chapter London Bridge, RHC will also deliver the resident-only Sky Bar on the 37th floor, offering a setting for relaxed evenings and social gatherings with panoramic views of London.
