Tomos Parry Unveils New In-Flight Menu for United Airlines

Michelin-starred chef Tomos Parry has unveiled a new in-flight menu for United Airlines.

The menu has been created exclusively for United Polaris international business class flights and will launch this August.

The project has been developed alongside world-renowned chefs brought together by Netflix’s Chef’s Table and creator David Gelb.

Other chefs involved include Nancy Silverton, Manu Buffara and David Barzelay.

Parry’s menu celebrates the best of the British Isles, drawing on his Welsh and Celtic roots.

It reflects his supplier-led approach and his love of cooking high-quality ingredients simply over flame.

As founder and co-owner of Mountain, Brat and Brat x Climpson’s Arch, Parry has gained international acclaim for his open-fire cooking and commitment to seasonal and local produce.

His long-standing relationships with farmers across the UK, as well as fishermen in Wales and Cornwall, guide the sourcing across his restaurants.

Through the United Airlines menu, Parry will continue to champion those trusted suppliers while bringing grilled and charred notes on board.

The menu will begin with grilled beef fillet with thyme, beetroot, Caerphilly cheese and mustard.

A salad will follow, featuring grilled Welsh lobster with grilled peach, tomato and fennel herb.

Larger dishes include wood-roasted Welsh lamb from Rhug Estate in North Wales, served with the restaurants’ smoked potatoes, grilled broccoli and green sauce.

There will also be halibut with Welsh favourite laverbread pil pil and parsley potatoes.

Alongside the menu, United and Chef’s Table have filmed an exclusive episode offering insight into Parry’s career.

The episode explores how his Welsh upbringing, the landscape, native produce and terroir have informed his London restaurants and continue to inspire his cooking, the landscape, native produce and terroir have informed his London.

Parry will also join Chef’s Table for its inaugural festival this August in Salt Lake City, Utah.

The festival will bring together international culinary figures for a weekend of more than 100 events from 13 to 16 August.

Parry said: “I am honoured and excited to be able to create this menu for United Airlines which not only tastes delicious whilst travelling but also showcases our style of cooking at Brat and Mountain, making the most of some of the best of British produce.

“One of the main reasons I became a chef was from my passion for travelling and have found so much inspiration from seeing and experiencing different cultures.

“It is exciting to be able to be an extension of someone’s own travels now, bringing a taste of the UK to United guests internationally.”
