Kent-born chef Charlie Dilworth has just been appointed Head Chef at Silva, the stylish Mediterranean-inspired restaurant that has just marked its 1st anniversary in Bruton Place, Mayfair, London.

Most recently Senior Sous Chef at Lita in Marylebone, London (one Michelin star), 29-year-old Charlie’s full CV also includes roles at Boys Hall (Head Chef, Ashford, Kent), The Good Shed (Canterbury), as well as at The Radnor Arms and Rocksalt (both in Folkstone, with Mark Sargeant).
Announcing the appointment, Silva owner Daria Grebenyuk said: “Silva has evolved over its first year, and Charlie is an ideal addition to the team, bringing a fresh perspective to the kitchen. He has embraced our modern Mediterranean style with enthusiasm, skill and creative input. His debut menu is full of flavour, seasonality and visual impact.”
Launching on 28 April, there will be a new à la carte menu, set lunch option (two courses £29pp), and weekend brunch offering. Several Silva signature dishes, which have proved hugely popular with guests, will remain, such as Cornish crab raviolo with langoustine sauce; Crispy fried egg, girolles and Parmesan sauce; and the Basque cheesecake.
Among the new dishes will be the following:
- White asparagus, cacio e pepe sauce, olive and preserved lemon
- Diced beef fillet, quail’s egg, tarragon, pickled mustard seeds
- Native lobster, carrot, smoked garlic, cucumber and bisque
- Braised ox cheek ragù, mafaldine, 24-month aged Parmesan
- Halibut with Orkney scallop, whipped ratte, grapes and chicken butter sauce
Enthusing about his new role, Charlie exclaimed: “Being appointed head chef at Silva is an incredible opportunity. The team and I are here to bring something fresh and exciting, but also to respect the standards that make this restaurant so special. My focus is simple—amazing ingredients, consistency, and an experience people want to come back for.”
Alongside Charlie, also joining the kitchen brigade is new Pastry Chef Phoebe Elsam, whose impressive background includes pastry chef roles at One Club Row, Harrods – The Georgian Restaurant, 45 Park Lane, and Scott’s of Mayfair. She, too, will be introducing a new dessert menu from late April.
