From 9 March, Michelin-starred chef Nieves Barragán Mohacho takes over The Donovan Bar at Brown’s Hotel for a three-month residency, bringing bold Spanish flavours and flair to one of Mayfair’s most iconic cocktail destinations.

One of the defining voices of London’s Spanish dining scene, Barragán Mohacho is the force behind Michelin-starred Sabor and Legado in Shoreditch – recently awarded its first star – further cementing her assured, contemporary take on Spain’s regional cooking.
Created especially for the rhythm of The Donovan Bar, the menu is a Spanish-led selection of small plates designed to be shared, revisited and enjoyed deep into the evening.
Highlight dishes include:
- Seared Tuna with silky Ajo Blanco
- Porthilly Oysters finished with Fino Sherry emulsion and citrus oil
- Pork Ear ‘A Feira,’ delivering depth and intensity in a single, decisive bite
- Confit artichoke with lovage aioli brings softness and herbal lift
- A deeply savoury Arroz Melosa anchors the menu
“For this residency, I wanted to create food that truly belongs at The Donovan Bar,” says Nieves Barragán Mohacho. “It’s a room with real character: glamorous, intimate, and full of life. The menu is rooted in Spain, but shaped for London: bold, expressive flavours designed to be shared over exceptional drinks. It’s about pleasure, generosity and creating dishes that feel as memorable as the night itself.”
Behind the bar, Maestro Salvatore Calabrese and Director of Mixology Federico Pavan will curate cocktails designed to pair seamlessly with the menu, from bright, citrus-led serves to drinks with subtle Spanish inflections, all delivered with The Donovan Bar’s signature polish.
Launching on 9 March 2026, the residency marks the next chapter in Brown’s Hotel’s culinary collaboration series at The Donovan Bar, introducing one of London’s leading chefs to its storied late-night scene.
