Dominus Hospitality is delighted to announce the appointment of Dimitri Liske as Head Chef for Rycrofte’s, the signature restaurant at The Derby London City, Curio Collection by Hilton, ahead of the hotel’s highly anticipated opening in March 2026.

Dimitri brings a wealth of culinary expertise and creative flair to Rycrofte’s, having spent over a decade in respected restaurants and hospitality venues across Australia and Europe, where he has developed a reputation for blending classic techniques that celebrate seasonal produce.
At Rycrofte’s, Dimitri will lead the culinary vision across the restaurant, coffeehouse, and bar, shaping an all-day dining experience that reimagines British classics with a modern twist.
Inspired by Sir John Rycrofte – Sergeant of the Larder to Henry VII and Henry VIII – and the setting beside St Dunstan-in-the-East, the menus will balance tradition and creativity, with fresh and locally sourced ingredients.
Designed to feel welcoming and memorable, Rycrofte’s will be a place where guests and locals can gather, from morning coffee through to evening drinks, enjoying food that is seasonal and distinctly British.

The Derby, affectionately named after The Bowler Hat, is scheduled to open March 2026, perfectly positioned on Great Tower Street just moments from the Tower of London, St Paul’s Cathedral, and eight tube stations. The hotel is a tribute to the area’s storied banking legacy and will be a great addition to the City of London.
