The innovative Bordeaux Distilling Co have launched the world’s first organic, transparent coffee liqueur called Brunette Clear that is also taking the battle to waste.

With the worldwide coffee industry believed to produce over 20 million tonnes of waste per year, Brunette Clear is made by utilising two often overlooked by-products of the coffee-making process – cascara (the de-pulped coffee cherry) and coffee blossom.
Both ingredients undergo separate two-week maceration periods in organic grain alcohol before being distilled at low temperatures with a rotary evaporator. This ensures that the delicate floral notes reminiscent of jasmine found in the coffee blossom and the cascara’s fruity, dried-grape notes evoking sultanas are retained.
A by-product generated from the filtration process of the company’s Brunette Organic Cold Brew Liqueur is then also pot stilled to produce a third and final transparent distillate. The three distillates are then carefully blended before a 6-month resting period, where the alcohol content is reduced gradually to 22% abv to ensure a smooth final product.
Reimagining how coffee liqueurs can be produced and used in cocktail serves, Brunette Clear Organic Coffee Liqueur provides a unique sensory experience to a range of classic coffee cocktails but also opens the door to original creations where coffee hasn’t been able to venture before.

Available from Love Drinks in a 70cl bottle and containing nearly four times less sugar than the mainstream coffee liqueurs on the market, Brunette Clear has zero additives or colourings, allowing the provenance of the beans and the one-of-a-kind blend to sing.
The Brunette liqueurs are produced in close collaboration with a local craft coffee roaster, who specialise in carefully sourcing and roasting the finest sustainable seasonal speciality arabica beans from world-class plantations and producers.
The blend of Arabica beans used in the Brunette Organic Cold Brew Coffee Liqueur include honey washed red catuai and icatu beans from La Victoria, Honduras, natural heirloom Gidaamii beans and washed heirloom Gera beans, both from Ethiopia. The organic cascara and coffee blossom are sourced from Guatemala.
